Handkäse mit Musik
(hand cheese with music) is a very traditional regional culinary specialty of souther part of Hesse. It is named hand cheese because it is traditionally formed with hands.
It is served with onions (music), caraway and oil and vinegar. Typically eaten with a hearty slice of bread and butter.
HOT SPICED CIDER
Hot Spiced Cider
1 l Apfelwein
60 g sugar
1-2 cinnamon stick
1 star anise
1 lemon sliced and or
1 orange sliced
Heat up 200 ml Apfelwein with sugar, oranges and spices bring to boil, take off heat and leave covered for 30 min.
Add remaining Apfelwein and heat up to approx. 80C, do not boil.
Put through sieve in serving container.
Can also be served with a shot,
100-150 ml vodka, gin or rum.
